Versatile Vegan Bean Salad

Here’s a protein packed bean salad than can be plated and dressed in so many ways!

What you’ll need:

2 Cups Black Beans

2 Cups Canellini Beans

2 Cups Garbanzo Beans

1 Whole Cucumber

1 Tomato

1 Onion

3 Tbs Oil of Choice ( I used Sunflower Seed)

3 Tbs Lemon Juice

2 Tbs Dillweed

2 Tbs Basil

1 Tbs Salt

1 Tbs Pepper

Directions:

On Stovetop bring 7 cups of water to boil in large pot on high heat. Once at a boil, add all 3 types of beans, 2 cups each. While Water boils/beans cook Begin to dice tomato, cucumber and onion. Once beans are finished cooking, drain them from water and place into large bowl. Add Oil, Lemon Juice, all the spices and then mix. Add in chopped veggies and mix again. Wah-Lah! You have a complete salad that is protein and energy packed ad ready to be topped in so many different ways.
