Vegan Spinach Dip

Well Tomorrow’s the last party of the year and we don’t want to show up empty handed do we? Here’s a quick and easy recipe that delicious, cheap and makes it look like you care when you walk in the door to spend the last day of 2017 with your friends.

What you’ll Need:

2 cans of Cannellini Beans

1/4 Cup Just Mayo

2 Cloves Garlic

3 Cups Spinach

4Tbsp Grapeseed Oil

Salt and Pepper to taste

Let’s Get Cooking:

Take a large Saucepan and place it on medium heat on the stove top. Add your 4 tablespoons of oil to pan and let it heat. One cup at a time add in your spinach, letting it wilt and adding the next cup and than the next. While this process is happening you can grab your can opener and open up your 2 cans of Cannellini Beans, drain out excess liquid and pour into your food processor or blender. Make sure to check on spinach and turn heat off once everything has wilted. Drain excess oil out of pan and add spinach to food processor along with all other ingredients, garlic, mayo, salt and pepper. Once everything is in the processor pulse until thick, creamy and smooth. Dip can be eaten right away which will be slightly warm from the spinach or cool off in the refrigerator, which is how I choose to enjoy this. This is great alone or I like to top onto a nice salad. Bringing it to a party, place in a bowl and surround with some crackers and veggies, Voila!
