It has come to my attention that I eat a lot of potatoes, sweet potatoes that is and this week I wanted to try to stray away from making them a part of my food prep. While thinking I would incorporate a mash of some sort into my cooking, I figured why not make Cauliflower Mash? This dish is so so so easy! So Tasty! and So much less carbs!
What You’ll Need:
3 Heads of Cauliflower
6 Cups of Water
4 Tbs Vegan Sour Cream
5 Cloves Garlic
2 Tbs Salt
2 Tbs Vegan Butter
Let’s Get this Party Started:
Place 6 cups of water in a pot and bring to a boil on the stove top. While Water comes to boil Begin to chop up the 3 heads of Cauliflower, removing the large stem and bringing the once intact vegetable to pieces. Once chopped up to your likings, place the cauliflower into pot of boiling water for 10 minutes or until you feel that the cauliflower is soft and tender.
Once the Cauliflower is tender, grab your strainer and strain the cauliflower over the sink removing all the water. Next take the cauliflower and pat it in-between paper towels to remove the excess moisture.
Once the cauliflower is semi-dry let’s put it into our blender. Add Salt, Add Vegan Butter (I used Earth Balance), Add GARLIC! Lots of Garlic.
Now Add the Sour Cream! I used Follow Your Heart Brand, as I had received some coupons at the 2nd Annual Vegan Mac-n-Cheese Smackdown.
With everything in the blender, let’s get this mixture creamy and smooth.
That which you don’t eat right away, pack up and either put in the fridge or it will also stay great frozen.
Now the only question is what will you pair this with?
