Vegan White Pizza

Was craving some White Pizza the other day and decided to see what kind of magic I could whip up by just using what I already had around the house. Thank goodness I keep myself stocked with a ton of miscellaneous items because this creation blew my mind and came about so organically and turned out absolutely delicious.

What you’ll Need:

2 large Pita Rounds

1 Cup Raw Cashews

1/2 Cup Raw Sunflower Seeds

1/2 Cup Vegan Butter

1/2 Cup Nutritional Yeast

1/2 Cup Almond Milk

2 Tbsp Garlic

1 Tbsp Salt

1/2 Cup Chopped Onions

1/2 Cup mushrooms

1 Fig

2 Tbsp Balsamic Vinaigrette

2 Tbsp Oil of Choice


Let’s get this Party Started:

Preheat Oven to 300 degrees and place both Pita Rounds on parchment paper or baking sheet.

In Blender add cashews, sunflower seeds, Vegan butter ( I like to use Earth Balance), Almond Milk , nutritional yeast, garlic and salt. Blend ingredients until you get a smooth, slightly grainy spread.

Spread “cheese sauce” on pitas. On a cutting board slice onion and fig into slices.

On one Pita add 1/2 the sliced onions and mushrooms, drizzle with 1/2 the oil. Feel free to add more garlic.

On other Pita add the rest of the sliced Onions, all the sliced figs and drizzle balsamic vinaigrette over each fig slice. Cover entire pita with the rest of the oil.

Place Pies in oven for 15 minutes. Crust will get slightly dark and be crispy but under the pie will be a great texture of slightly cooked pita. Cut into slices and serve!
